Cold Chicken Salad

When I got together with my mom and sisters last weekend, we had this amazing chicken salad: a recipe my mom has had for years. Everyone has been asking me to share it, so here you go. Some bonus history about the recipe from my mom "I got it off a calendar that (I think to best of my memory) the Girl Scouts were selling for a fund raiser but I don't really remember them selling anything but cookies. Anyway it is on the back of a calendar from January, 1973. The calendar is called Salad Days - a social calendar. Ha, I don't see anyone's name taking credit for any of the recipes- the hot chicken recipe I use is also on the same page."

Ingredients:
3 cups diced, cooked chicken breasts
1 1/2 cups celery cut in 1/2 inch pieces
1 1/2 TBLS lemon juice
1/2 cup toasted almonds
1 tsp salt
1/2 cup heavy cream, whipped
1 cup mayonnaise
lettuce
hard-cooked eggs
cherry tomatoes or tomato wedges
Directions:
Combine chicken, celery, lemon juice, almonds, salt and pepper. Toss and refrigerate for at least one hour. Just before serving time, whip cream, fold into mayo, then fold into chicken mixture. Serve on a bed of lettuce, garnished with eggs and tomatoes. (A nice addition is seedless grapes or pineapple chunks, either canned or fresh...or Brook's preference...green olives and dried cranberries!)

Hot Chicken Salad

This is the HOT chicken salad my mom also got from the Girl Scout calendar from 1973. HA. We've MADE this SO many times since then! It is really good and different and SUPER easy!

Ingredients:
2 cups chicken, cooked and diced
2 cups celery, diced
1/2 teaspoon salt
1 cup mayonnaise
2 tablespoons lemon juice
1/2 cup slivered almonds
2 teaspoons grated onion
1 cup potato chips, crushed
1/2 cup grated cheese
Directions:
Mix first 7 ingredients. Pour into greased 8 x 8-inch baking dish. Cover with potato chips and cheese. Bake at 350° until bubbly around edges, about 30 minutes.
