Brook's Broccoli Cheddar Soup
I don't know if you remember the restaurant TE Murch's, but I used to go there at least once a week for a salad and their Broccoli Cheese soup! It was SO GOOD. I have never found anyone else that makes it like they did. I did find a recipe that tasted similar and after a few tweakings, I think I've gotten it pretty close!

- Ingredients:
- 1/2 cup butter
1/2 cup flour
6 cups chicken stock
6 cups milk
1/2 teaspoon salt
1 teaspoon white pepper
3 1/2 cups fresh broccoli florets
1 pounds processed cheese (small cubes)
2 cups shredded triple Cheddar cheese
- Directions:
- 1. Melt butter in a large pot over medium heat and mix in the flour. Reduce heat to low and cook, stirring constantly, about 2 minutes. Mix in the chicken stock and milk then season with salt and white pepper. Bring to ALMOST a boil (be VERY careful not to scorch!) Reduce heat to low and simmer about 10 minutes.
2. Bring a pot of water to a boil. Put broccoli in the boiling water and cook 3 minutes, or until just tender. Remove from heat, drain, and set aside.
3. Gradually mix the processed cheese and Cheddar cheese into the large pot until melted. Mix in the broccoli. Continue cooking about 20 minutes.
