If your're trying to incorporate more healthy fats into your diet you might try what I made last night. I roasted brussel sprouts in the oven with bacon and butter! Here is my recipe-
1 1/2 pounds of brussel sprouts
4 slices of uncooked bacon, diced
2 T butter (no salt)
salt and pepper
Trim the ends off of the sprouts and then cut in half. Melt the butter and then toss with the sprouts. Put the sprouts on a baking sheet, add the diced bacon and top with salt and pepper. Bake for 30 minutes at 400 degrees. Be sure to flip the sprouts a few times so that they brown evenly. Enjoy!
