Cinnamon Pinwheels

Ingredients:
1/4 cup superfine sugar
2 teaspoons ground cinnamon
2-9 oz puff pastry (there are usually two packages of pastry in one box)
2 eggs, beaten
Flour for dusting surface
Directions:
Preheat oven to 425 F.
Spray no-stick cooking spray on a baking sheet.
Combine cinnamon and sugar in a small bowl and stir to combine.
Unroll the pastries until a lightly floured surface.
Sprinkle sugar combination on the dough.
Rollout out the pastry to a 10 - inch square so that the sugar in pressed into it.
Roll out the pastry into a log, brushing the end of the pastry with a little more egg to secure the edge in place.
Using a sharp knife, cut the log into thin slices, about 1/4-inch, and transfer them to the prepared baking sheet.
Bake for 10 minutes, until golden and crisp.
Transfer to a cooling rack.
Allow to cool before eating.

One whole package of puff pastry makes 40-50 pinwheels.
